Fermented bean curd is a all-round type of condiment. Braised and stewed meat, such as beef, mutton and pork, are almost inseparable from fermented bean curd; hot pot seasoning and some barbecue seasoning, without fermented bean curd would feel like missing a soul; even if you go back to the simplest daily dishes, such as adding fermented bean curd to steamed meat or fried eggs, it will be like having icing on a cake. Its versatile nature makes it as important as salt and oil in our kitchen and on our dining table. Fermented bean curd has accompanied us growing up and growing old from generation to generation, which has became not just part of our food culture, but also an inherited belief in life.

Fermented bean curd is an original condiment in China, including red, green and white fermented bean curd, sauce fermented bean curd, assorted fermented bean curd and so on.  It is a soya bean derived product that been fermented, pickled and processed. It is a common condiment for East Asians either to eat with rice , or used in cooking.
Fermented bean curd has a long history. As early as the 5th century AD in the ancient books of Wei Dynasty, there were records of fermented bean curd  production technology. In the Ming Dynasty, a large number of fermented bean curd were processed in China. Nowadays, it has grown into a condiment with modern technology. China's fermented bean curd has been exported to Southeast Asia, Japan, the United States, Europe and other countries and regions. It is seen as one of the unique fermented products in China that has a history of more than one thousand years.

PRODUCT NUTRITIONAL VALUES

Fermented bean curd's raw material is soybean and it has a unique fermentation process during its production. We know soybeans have high nutritional values, but the fermentation process will push them to a much higher level.

Fermented bean curd's protein content is 15% - 20%, which is equivalent to meat. Its protein is decomposed during fermentation, which makes it easier to be digested and absorbed by human body. At the same time, phyticacid in soybeans is also decomposed by microorganisms, minerals such as iron and zinc that have low absorption rate, were made easier to be absorbed as well.


Its fermentation also triggers microbial synthesis of vitamin B12, which is not available in general plant food. Intake of vitamin B12 can prevent pernicious anaemia and Alzheimer's disease, therefore, fermented bean curds are popular for vegetarians.

Fermented bean curd is also rich in calcium, amino acids and isoflavones. Soybean isoflavones can effectively prevent and inhibit leukaemia and has anti-tumor effect.

The unique manufacturing process and rich nutritional value of fermented bean curd has won the title of "Chinese cheese". However, fermented bean curd does not contain cholesterol. Compared with cheese that has high cholesterol level, fermented bean curd is healthier.


Good quality fermented bean curds do not use artificial colours. There is a layer of red substance on the surface of red bean curd, which is a natural pigment produced by monascus and it is a natural blood lipid scavenger.



Attention

Salt content of a piece of fermented bean curd is about 1g, which is 1/6 of a person's daily total intake. Purine content of fermented bean curd is generally high. People with hypertension, cardiovascular disease, gout, kidney disease and peptic ulcer should limit their intake.

In addition, nitrite, a substance that often found in processed meat and seafood, may be produced during storage of fermented bean curds, if they are not stored properly after opening, although it won't produced during fermentation process, therefore, it is recommended not to leave an open jar for over a week, or shall store it in a refrigerator.
